Treats and Snacks

Paleo Granola  


5 cups nuts and seeds (pumpkin seeds, flaxseeds, pecans, sunflower seeds, slivered almonds
1/3 cup honey
1/3 cup coconut oil (I used olive oil and like it better with a little less oil - 1/4 cup tops)
2tsp vanilla
1tsp cinnamon
1tsp nutmeg
1 cup raisins or other dried fruit
1 cup shredded unsweetened coconut

mix honey, oil, vanilla and spices in saucepan until boiling. Remove from heat and cool. Spread nuts over greased cookie sheet and pour honey mixture over nuts. Mix it around to get well coated then bake at 300 for 30 minutes. After it has cooled slightly move to a bowl and Mix in coconut and fruit. * If you want to make bars mix it with almond or sunflower butter and press into a pan and pop in the fridge.

Paleo Brownies


1 cup pitted dates
1 cup walnuts
1/4 cup unsweetened cocoa

Put ingredients in a food processor and blend until finely chopped. Pour mixture into a small baking dish. Press down the mixture until formed into the dish. Put in freezer at least 30 minutes. Cut and ENJOY!


"French Toast" Fruit
1 apple sliced
1 banana sliced
1 egg
1/4 cup egg whites
1 scoop vanilla protein powder
1/3 cup light coconut milk
1 tsp vanilla
1 tsp cinnamon
1/4 cup flaked coconut
1/4 cup chopped pecans or walnuts

spray 9X9 pan and lay out apple slices in single layer.  Mix egg, egg whites, coconut milk,protein powder and vanilla and pour over apples and banana. Sprinkle coconut, pecans, and cinnamon over top and bake at 375 for 15 minutes


Semi-Cheat Fruit and Nut Balls
1/2 cup dried apricots
1/2 cup blanched almonds
1/3 cup raisins
5 oz dark chocolate chips
1/3 cup flaked coconut

chop apricots, almonds and raisins finely by hand or in food processor.
Melt chocolate in microwave glass bowl stirring every 30 seconds.  Stir in chopped ingredients and coconut. Form small balls and place on waxed paper and cool. (I store in the fridge)

Parsnip Chips

1 parsnip
sea salt
carribean jerk seasoning
Peel and slice parsnip very thin.  Spray plate with pam and lay parsnip out in single layer. Spray again and sprinkle with seasonings.  microwave for 3 to 4 minutes and watch CLOSELY. Stop microwave when they start browning. Can't make many at a time, but they are great! no need for potato chips ever again!

Apple Chips

Apple
Cinnamon
Preheat oven to 250 degrees. Slice apple very thin and lay out in single layer on sprayed pan. Sprinkle with cinnamon and bake for an hour or until dried. Remove from sheet immediately and cool. (might be able to do these in the microwave too, will try another time and let you know)



Jicama Appetizer

1 jicama, peeled and cut in bite size pieces (like french fries)
2 Tbs lime juice
2 Tbs chili powder
Arrange and sprinkle with lime juice and chili powder. No need to cook, just eat!
