With super lean stew meat sitting on the counter to defrost this morning Abby walked by and asked what we were having for dinner. How about beef and broccoli mom - well, can't refuse a paleo friendly request from my daughter so I went searching for recipes and found a great one on the Crossfit Santa Cruz Central food blog. I must admit that it wasn't too bad! Really easy to make, too.
ReplyDeleteI made this tonight. We all liked the cauliflower rice a lot. I cooked that ahead of time and then let it sit on the stove on low heat for over an hour with the lid on the pan and it tasted really good. I did add some sea salt to it. I marinated my round steak strips for 5 hrs and then after browning it I let it simmer on the stove (lid on) for over an hour to make the meat less chewy. It was good!
